Choco Quinoa Cookies with White Choco Chips
“ Who Stole the Cookie from the Cookie Jar” — does that ring a bell? the sing-along game that so many kids of my generation used to play. I remember as a kid I played it in school, in the school bus with my cousins — game with the clapping, tonalities of accusation and defense — and we used to love it. Even thinking of the game brings a broad smile to my face :-) and ya with this game “ the more the merrier” — which is so against the tide of times today.
So cookie has another story in my life that brings a broader smile to my face. My niece has this brigade of “Big eyes” soft toy family — each person in the fam gets to be a “Big Eye” soft toy. She is the boss baby and chooses who gets to be which big eye — apparently, the big eye that I get to be is called “Cookie”. I requested her for a photo of cookie — and she sent it to me with her cookie love! So here is one more Cookie the little cutie in the photo eating a bag full of cookies!

Coming back to cookies, Since in the market it's not easy to get gluten-free cookies, I chose to make this rather simple recipe. I adapted this recipe from Simply Quinoa, just love her blog and recipes. It takes 30 minutes — start to finish, that's it!
Finally with all the Cookie stories and cookie love here is the recipe of Quinoa white choco-chip cookies!
Makes ( 8- 10 medium-sized cookies)
Ingredients —
Dry —
Quinoa Flour ( 1/2 Cup)
Cocoa Powder — 3 table spoons
Baking Soda — 1/2 Tsp
Sea Salt — 1/4 tsp
Cinnamon — 1/4 Tsp
White Choco chips — 3 Tablespoons
Wet -
Peanut Butter — 1/4 Cup
Coconut Oil — 1/4 Cup
Honey — 3 tbsps
Brown Sugar — 1/4th Cup
Vanilla Essence — dash
Egg — 1
Method —
- Mix together all the dry ingredients except the white choco chips together in a bowl.
2.All the wet Ingredients — I just add them in a blender and give a quick blitz. It becomes this gooey caramelly buttery yummy mixture.
3. Mix the dry and wet ingredients together. Once the mixture is of a nice loose dough-like consistency, gently fold in the white choco chips. Avoid over mixing the white choco chips and just envelop them in the cookie dough.
4. Line a baking tray with parchment and make medium sized rounds — and press a little bit, press mine with a fork on top just for fun to give a slightly different looking design
5.Bake in a preheated oven at 180 degrees for 10–12 minutes.
6. Cool on a wire rack and fill the cookie jar :-)
