Brownie a day keeps the frownie away

This brownie has a story — my neighbor friend apparently ate a brownie, which scarred her from eating brownies. To restore her faith in the goodness of brownies ( Lol ) — I decided to bake a batch of brownies. Since I’m gluten-free these days — so this was a new experiment. So at 10 in the night while my friend and I were done playing our umpteen rounds of Uno — I told her “Let’s bake brownies”, from there we made these yummy fudgy brownies. I had 2 cans of condensed milk which I had sourced with great difficulty — after 3 failed order attempts — I was itching to use these babies. I found brownie recipe which would use Condensed milk, condensed milk adds a great chewy texture to the brownies …. so here goes the recipe...

Ingredients :

Wet ingredients :

Condensed Milk — 1 can

Egg — 1

Butter — 1/2 cup

Vanilla essence — 1 tsp

Dry Ingredients :

Quinoa Flour — 1 cup

Cocoa powder — 1/2 Cup

Chocolate Buttons — 1 cup ( I used chocolate sprinkles instead .. worked just fine)

Fine sugar — 1/2 cup

Xantham Gum — 1/2 tsp

Baking Powder — 1/4 tsp

Baking Soda — 1tsp

Salt — 1/2 tsp

Method :

  1. Over a low flame, in a pan heat the condensed milk and add the butter in it till it forms a smooth luscious liquid. Top off with the vanilla essence and let cool a bit.

2. Sift all the dry ingredients in a sieve except the Chocolate Buttons/sprinkles.

3. Add the sprinkles to the dry ingredient mixture till the sprinkles are all coated well with the dry flour mix.

4. In a Mixing bowl — mix the dry ingredients with the wet and beating in the egg to the mixture.

5. Grease a baking pan pour the batter in the pan and bake in a preheated oven at 190 degrees for 25–30 minutes.

Let cool a bit ( if u have the patience ) and cut into squares .. and take cute photos of the brownies while u eat em warm !

In one hour you have a kitchen that smells divine, a friend with a broad smile and a soul so satisfied & gratified !

Well, the end result was amazing — my friend ate 2 pieces of the brownie and I felt so rewarded, both of us relishing the dark sweet goodness and giggling away !
